Canned water chestnuts (which are already peeled and cooked), are a convenient standby to have in the cupboard. Despite its name, the water chestnut is not a nut, but is in fact a corm (swollen plant stem), cultivated in paddy fields. The pale flesh has a noticeably crisp texture and delicate flavour. In China, candied water chestnuts are a popular snack, while in Thailand finely chopped water chestnuts are used to add texture to dainty sweet confections made from coconut milk and flavoured with pandan. Rinse canned water chestnuts and use them whole or sliced to add a pleasing crunchiness to dishes such as stir-fries or braised dishes.
