Fideo noodles are short, fine, egg-free noodles, similar to vermicelli. Fideo noodles are also known as fideu and Angel Hair pasta. Fideo noodles are used in traditional Spanish dishes – sopa de fideo, and the pasta-based version of paella called fideuĂ . To cook, boil them in salted boiling water for 4-6 minutes until softened or add them straight to simmering stock or soups.
These noodles are made by the SanmartĂ family, whose pasta company was established in 1700. They are based in Caldes de Montbui, a Roman spa town 20 miles north of Barcelona.
